

Oreo Tortellini
Pasta:

4 Large Eggs (Room Temp)

2 ½ Cups Flour

1 Tbsp. Olive Oil

1 Tsp Salt

1 Cup of Crushed Oreos
Ricotta Mint Filling:
-
½ Cup of Ricotta
-
½ Cup of Oreo Cream Filling
-
1 Tbsp of fresh Mint
-
1 Tbsp of Lemon Juice
-
1 Tsp of Vanilla Extract
Sweet Vanilla Béchamel:
-
1/2 Cup of Butter
-
1/2 Cup of Flour
-
1 tbsp. of Vanilla

1 Cup of milk

Ok so this gem came from a competition that I was entering with Meglio Knives. The premise was to make a dish with Oreos and of course since you guys know that Chef Hart Loves the pasta so I decided to do a Oreo Tortellini Pasta with a Vanilla Sweet Cream Béchamel Sauce. Its a play on cookies and milk ya know ? So get into it a have fun.

So with the pasta, look back on my homemade pasta dish and just add Oreo powder or crumbs to it to change the color. Use the pasta roller and do the same thing that you would do with the other pasta and make your flat pieces. Do not cut them!
Now once your pasta is finished you can make your filling by putting ricotta, cream cheese, vanilla, lemon juice and the cream from the Oreos and the mint. Mix the ingredients together and BOOM! you have your filling.
So you have your filling and your sheets so if you have your pasta cutter or ravioli press. Begin to cut out the pieces and place your filling in the middle of your pasta pieces and begin to wrap them. ( If you want to learn how to wrap tortellini then check out my pasta video coming out soon.)
Once your tortellini's are filled and wrapped you can set your water to boil. Set your tortellini in the boiling water for three minutes and its done. Now to your sweet cream béchamel you want to begin to make a roux out of equal parts butter and flour . Once its mixed and clumpy with a nutty aroma make sure you add your milk and your vanilla extract and mix until its a nice creamy consistency.
Now the best way to plate would be to get a nice bowl. Set your sweet cream béchamel as the base. The set your tortellini's on top of the bed of béchamel and use the frozen cream to shave on top and a nice dap of Oreo powder on top and finish with a mint leaf.
